Anna's Lemon Drizzle Cake
Thursday, August 07, 2014I saw Anna from viviannadoesmakeup.com make this lemon drizzle cake on her YouTube channel and thought I would give it a whirl as she said it tasted delicious. Mine may not have looked as good as Mary Berry's or Anna's but it tasted good for a first attempt - if I do say so myself!
Ingredients: (Makes 16 slices)
225g butter
225g caster sugar
275g self-raising flour
1 tsp baking powder
4 large eggs
4 tbsp milk
grated zest of 2 lemons
For the glaze:
juice of 2 lemons
175g granulated sugar
1. Preheat your oven to 180 C (fan 160 C/350 F/Gas 4). Grease and line a traybake tin measuring 30x23cm and 4cm deep.
2. Add all ingredients into a large mixing bowl and beat with an electric mixer for 1-2 minutes or a wooden spoon for a little longer, until the mixture is smooth.
3. Pour into tin and spread evenly.
4. Bake for 35-40 minutes in a preheated oven, or until springy to the touch.
5. Make the glaze and spoon over the warm cake when it is out of the tin.
6. Leave to cool and then cut into 16 slices.
